1Sauté the leeks in a pot with a bit of butter until they’re soft and fragrant.

2Add the potatoes and fish stock. Simmer until the potatoes are just tender.

3Turn the heat down and stir in the heavy cream until the broth is velvety.

4Gently drop in the salmon chunks. They only need about 3 to 5 minutes to cook through.

5Turn off the heat, toss in plenty of fresh dill, and let it sit for a minute so the flavors meld.
