The story behind
This recipe instantly transports me back to a tiny rooftop terrace in Rome where I had dinner with some friends a while back. It was a warm evening, and the waiter brought out a massive wooden board piled high with these crisp bruschettas while we waited for our mains. We got so caught up chatting that we almost filled up on these alone. It's the perfect light starter for an easygoing dinner. To drink, a glass of chilled, young red wine or a refreshing sangria pairs with it beautifully.

1In a medium bowl, toss the diced tomatoes with the minced garlic, fresh basil, two tablespoons of olive oil, salt, and pepper. Let it sit on the counter for a few minutes so the flavors marry.

2Place the baguette slices on a baking sheet and toast them in the oven or on a hot skillet until they are beautifully golden and crunchy.

3Take the warm toasts and rub the whole garlic clove gently across the rough surface of each slice; the heat will naturally draw out the garlic aroma.

4Drizzle just a tiny touch of the remaining olive oil over the warm bread pieces before adding the toppings.

5Spoon a generous amount of the seasoned tomato mixture onto each slice, top with the crumbled cheese, and serve them up immediately on a nice wooden platter.
