Let me tell you, this dish is an absolute summer dream! The very first time I ever made a clafoutis salé was for an impromptu afternoon picnic out in the countryside. I was already familiar with the classic sweet version from the Limousin region that uses cherries, but one warm weekend I decided to experiment with a bunch of cherry tomatoes that were sitting in my fridge. The result was completely mind-blowing; the baked batter achieves this incredibly delicate, melt-in-your-mouth texture similar to a light flan or soufflé, and when you bite into the warm, roasted tomatoes, the flavors balance out beautifully. Personally, I absolutely love having this for a long weekend brunch or a light afternoon snack out in the garden. It looks stunning if you serve it lukewarm and arrange some extra fresh tomato vines right next to it on the table. To drink, a cold glass of fresh watermelon-mint water or a chilled glass of dry rosé wine pairs like absolute heaven to complement those bright summer layers.

1Preheat your oven to 180°C and generously grease an oval ceramic baking dish with the tablespoon of butter.

2Arrange all the whole cherry tomatoes evenly across the bottom of the greased dish, just like the setup shown in Clafoutis Salé.png.

3In a large mixing bowl, whisk the three fresh eggs vigorously with a balloon whisk until light and slightly frothy.

4Gradually add the sifted all-purpose flour into the eggs while whisking constantly to ensure a perfectly smooth base without lumps.

5Slowly pour in the whole milk along with the finely grated parmesan cheese, herbes de Provence, and a good pinch of salt and black pepper.

6Carefully ladle this smooth liquid batter right into the baking dish over the cherry tomatoes, letting the tops of the tomatoes peek out slightly.

7Bake for about 35 minutes until the center sets completely, the top turns beautifully puffed, and the edges display a gorgeous golden-brown crust.
