I was already familiar with the classic sweet version from the Limousin region that uses cherries, but one warm weekend I decided to experiment with a bunch of cherry tomatoes that were sitting in my fridge. The result was completely mind-blowing; the baked batter achieves this incredibly delicate, melt-in-your-mouth texture similar to a light flan or soufflé, and when you bite into the warm, roasted tomatoes, the flavors balance out beautifully. Personally, I absolutely love having this for a long weekend brunch or a light afternoon snack out in the garden. It looks stunning if you serve it lukewarm and arrange some extra fresh tomato vines right next to it on the table. To drink, a cold glass of fresh watermelon-mint water or a chilled glass of dry rosé wine pairs like absolute heaven to complement those bright summer layers.
