The story behind
Shakshuka is a foundational dish for breakfast or lunch in Tunisia and throughout the Maghreb. It is valued for its intensity of flavor, achieved through a slow cooking of fresh tomatoes and peppers, seasoned with spices like cumin, paprika, and traditionally, harissa for a spicy kick. It is a dish that brings families together as it is served directly from the pan in the center of the table.
Instructions
-
1Sauté the garlic and peppers in a pan with oil until tender.
-
2Add the tomatoes and spices (along with the harissa); cook until the sauce thickens and reduces.
-
3Make small wells in the sauce and carefully crack the eggs into them.
-
4Cover the pan and simmer until the egg whites are set but the yolks are still runny.
-
5Serve immediately with crusty bread to dip into the sauce.
