Refried Beans

The story behind

Whenever I feel a bit homesick or just want a cozy meal, I think of my aunt Elena stirring her clay pot. She used to say that a home without refried beans is like a day without sunshine. This recipe comes straight from central Mexico, where we eat them pretty much anytime. Personally, I think they hit the spot during a late morning brunch. They go beautifully with crispy tortilla chips or some crumbled fresh cheese on top. For the perfect pairing, grab a hot cup of 'café de olla' spiced with cinnamon. It is pure comfort in a bowl.

Instructions

  1. 1
Heat the lard or oil in a large skillet over medium heat until it is completely melted.
  2. 2
Toss in the chopped onion and sauté until it becomes translucent and fragrant, making sure it doesn't burn.
  3. 3
Carefully pour in the beans along with a splash of their broth so they stay nice and moist.
  4. 4
Using a potato masher or a heavy back of a spoon, mash the beans thoroughly until they reach a smooth, velvety texture.
  5. 5
Keep cooking over low heat, stirring constantly so they don't stick to the bottom, until they thicken up just the way you like them.
