The story behind
Whenever I feel a bit homesick or just want a cozy meal, I think of my aunt Elena stirring her clay pot. She used to say that a home without refried beans is like a day without sunshine. This recipe comes straight from central Mexico, where we eat them pretty much anytime. Personally, I think they hit the spot during a late morning brunch. They go beautifully with crispy tortilla chips or some crumbled fresh cheese on top. For the perfect pairing, grab a hot cup of 'café de olla' spiced with cinnamon. It is pure comfort in a bowl.

1Heat the lard or oil in a large skillet over medium heat until it is completely melted.

2Toss in the chopped onion and sauté until it becomes translucent and fragrant, making sure it doesn't burn.

3Carefully pour in the beans along with a splash of their broth so they stay nice and moist.

4Using a potato masher or a heavy back of a spoon, mash the beans thoroughly until they reach a smooth, velvety texture.

5Keep cooking over low heat, stirring constantly so they don't stick to the bottom, until they thicken up just the way you like them.
