Beef Barbacoa Tacos

1On a hot dry skillet, briefly toast the dried chilies, the half onion, and garlic cloves until fragrant. Transfer the chilies into a pot of boiling water and let them hydrate for 10 minutes until soft.

2Blend the hydrated chilies, toasted onion, garlic, all the dry spices (oregano, cumin, clove, allspice, cinnamon), and a heavy pinch of salt with a splash of water until a thick, smooth adobo paste forms. Pass it through a fine-mesh strainer.

3Place your beef cuts into a pressure cooker and bathe them completely in the strained adobo sauce. Add about 3 cups of water (just enough to lightly cover the meat structure).

4Lock the pressure cooker lid and cook over medium-low heat for roughly 1.5 hours after the valve begins whistling. If using a regular heavy pot, simmer tightly covered for 3 to 4 hours until the meat completely falls apart.

5Carefully open the pressure cooker once the steam is safely released. Lift the beef out and shred it finely using two forks; it will be incredibly tender and juicy.

6You will notice a beautiful layer of red fat floating on the surface of the cooking broth (the consomé). Apply the master technique: dip a corn tortilla lightly into this red surface fat, then immediately lay it flat onto a hot griddle.

7Mound a generous portion of the shredded beef onto one half of the tortilla, fold it over, and let it pan-fry until the shell becomes intensely crispy, gathering that stunning orange-red hue seen in the photo.
