Esquite: Mexican Corn in a Cup

The story behind

Esquite is, without a doubt, one of the treasures of Mexican street food. There is nothing like the aroma of corn boiled with epazote when passing by a stall in the plaza or on a corner. Everyone has their favorite way of preparing it: with extra spicy or mild chili, double cheese, or a little extra lime. To me, it represents the joy of daily life and that authentic flavor that unites all Mexicans, no matter where they are.

Instructions

  1. 1
Cook the corn kernels in salted water with a sprig of epazote until tender.
  2. 2
Serve the hot corn in individual cups.
  3. 3
Add a tablespoon of mayonnaise, some cheese, lime juice, and chili powder to each cup.
  4. 4
    Mix everything well before enjoying.
