The story behind
Esquite is, without a doubt, one of the treasures of Mexican street food. There is nothing like the aroma of corn boiled with epazote when passing by a stall in the plaza or on a corner. Everyone has their favorite way of preparing it: with extra spicy or mild chili, double cheese, or a little extra lime. To me, it represents the joy of daily life and that authentic flavor that unites all Mexicans, no matter where they are.

1Cook the corn kernels in salted water with a sprig of epazote until tender.

2Serve the hot corn in individual cups.

3Add a tablespoon of mayonnaise, some cheese, lime juice, and chili powder to each cup.
