2In a heavy-bottomed pot or earthenware dutch oven, heat the two tablespoons of olive oil over medium heat and drop in the pancetta strips. Sauté for 3 minutes until the fat renders down and they turn lightly golden.

3Toss the finely minced onion into the pot and sauté for another 3 minutes until translucent, fragrant, and soft.

4Add the small diced beef cubes to the pan, season with a pinch of sea salt and cracked black pepper, and sear over medium-high heat for 4 to 5 minutes, stirring continuously until nicely browned on the outside.
