The first time I attempted to cook fresh okra at home, I committed the tragic mistake of slicing it into thin rounds and boiling it straight away. It turned into a gooey, uninspired slimy paste that went straight into the trash; a complete culinary heartbreak. But then, a local home cook in Beirut shared the ultimate golden rule: to prevent any sliminess, the okra pods must be kept entirely whole, trimming only the very top tip of the stem in a neat cone shape without piercing the inner chamber, and the master trick is flash-frying them in hot olive oil before anything else to seal the structure. The other brilliant trick to getting it looking exactly like the photo layout is using large chunks of ripe vine tomatoes and letting the dish braise slowly in its own natural juices.     Tumble the whole okra pods into the hot oil pan and sauté for 5 to 7 minutes, tossing smoothly. This is the critical stage: the hot oil flash-seals the outer skin matrix, completely preventing a slimy result. Remove the okra from the pan and set aside on a plate.

    In the same skillet carrying the remaining aromatic oil, lower the flame to medium and drop in the rough white onion pieces and sliced garlic. Sweat slowly for 5 minutes until soft and translucent.
