1In a large, heavy-bottomed Dutch oven, heat the three tablespoons of olive oil over medium-high heat. Toss in the beef cubes seasoned with salt and pepper and sear for 5 minutes until a beautiful brown outer crust develops; transfer the meat and its drippings onto a side plate.

2In the same pot, turn the heat down to medium-low and dump in the massive mountain of sliced onions along with the small diced carrots and celery. Add a small pinch of salt to encourage the onions to release their moisture.

3Sauté the veggies uncovered, stirring frequently, for about 10 minutes until the onions sweat down significantly and begin turning translucent.

4Return the seared beef chunks and any accumulated juices back into the pot. Pour in the dry white wine and let it bubble for 2 minutes to cook off the alcohol harshness.

5Cover the pot with a tight-fitting lid, drop the heat to the absolute lowest simmer setting, and let the ragù slow-cook for 2 to 2.5 hours. Stir occasionally with a wooden spoon; you will witness the onions completely dissolve, melting down with the beef fat to yield a rich, dark amber, intensely glossy glaze.

6Uncover the pot for the last 15 minutes of simmering if you feel the sauce carries too much liquid, allowing it to reduce to a perfect thick coat consistency.

7While the ragù wraps up, boil a large pot of salted water and cook your long pasta until beautifully 'al dente'. Drain, reserving half a cup of the starchy cooking water.

8Dump the freshly drained pasta directly into the pot of slow-braised Genovese ragù, add a tiny splash of the pasta water, and toss everything vigorously together over low heat for 1 minute so the strands fully absorb the sweet caramelized sauce and the vegetable cubes distribute perfectly, mirroring Pasta alla Genovese.png.
