1In a large pot, brown the chorizo slices until they release their fat and are cooked through.

2Add the potato cubes and red pepper flakes, stirring to coat them in the chorizo flavor.

3Pour in the chicken broth and bring to a boil; reduce heat and simmer for 15-20 minutes until potatoes are tender.

4Stir in the kale and cook for another 5 minutes until softened but still green, as shown in the photo.
