The story behind
Sometimes, when I need a hug from my plate, I make this curry. It takes me straight back to that tiny spice shop I discovered years ago; that scent of turmeric and cumin is unmistakable. It’s a recipe I love making when I have people over, because it always leaves everyone smiling and asking for seconds. I like to enjoy this at lunchtime, when I have the time to savor every spice without rushing. I always pair it with some freshly made naan bread and a mango lassi to balance that little kick of heat that I find so fascinating. It’s incredible how something as simple as cauliflower can transform into something so deep and comforting; it’s pure kitchen magic that makes you feel like, even for just a moment, you are somewhere else in the world.

1Cook the basmati rice with a pinch of turmeric so it takes on that beautiful golden color.

2In a large pan, sauté the cauliflower florets until they start to turn slightly golden.

4Pour in the coconut milk and let it simmer over low heat until the cauliflower is tender and the sauce has thickened.
