The story behind
These tacos are, without a doubt, one of my favorite creations when I want to relive the flavors of a taco night with friends, but in a lighter version. The key is in the marinade: when the cauliflower soaks up those dried chiles and spices, it becomes irresistible. I love watching the cauliflower caramelize in the pan while the aroma fills the kitchen. Serving them with fresh pineapple, the contrast between the spicy kick of the marinade and the sweetness of the fruit is simply magical. It's a recipe that always manages to surprise me and makes me feel like I can enjoy tradition in a new and creative way.

1Blend the chiles with spices to create a thick marinade and mix it with the cauliflower until well coated.

2Cook the marinated cauliflower in a pan over medium-high heat until tender and lightly browned.
