Cauliflower Al Pastor Tacos

The story behind

These tacos are, without a doubt, one of my favorite creations when I want to relive the flavors of a taco night with friends, but in a lighter version. The key is in the marinade: when the cauliflower soaks up those dried chiles and spices, it becomes irresistible. I love watching the cauliflower caramelize in the pan while the aroma fills the kitchen. Serving them with fresh pineapple, the contrast between the spicy kick of the marinade and the sweetness of the fruit is simply magical. It's a recipe that always manages to surprise me and makes me feel like I can enjoy tradition in a new and creative way.

Instructions

  1. 1
Blend the chiles with spices to create a thick marinade and mix it with the cauliflower until well coated.
  2. 2
Cook the marinated cauliflower in a pan over medium-high heat until tender and lightly browned.
  3. 3
Warm the corn tortillas and place a generous portion of the al pastor cauliflower on each one.
  4. 4
Garnish each taco with fresh pineapple cubes, chopped onion, and cilantro.
  5. 5
Serve immediately with lime wedges on the side to add that final touch of freshness.
