1Preheat your oven to 220°C (very high heat setup). If you prefer the traditional street-style fry method of Beirut, prepare a deep skillet with plenty of frying oil instead.

2Ensure the washed cauliflower florets are bone-dry using kitchen towels. Spread them onto a baking sheet, toss thoroughly with the 3 tablespoons of extra virgin olive oil, and season aggressively with coarse sea salt and a pinch of ground cumin.

3Roast the cauliflower in the hot oven for 20 to 25 minutes, turning them over halfway through the process. We want an aggressive roast matrix: the outer edges must gather that deep golden-brown, charred finish visible in the photo.

4While the oven finishes toasting the vegetable, build the sesame glaze: combine the pure tahini paste, garlic paste, fresh lemon juice, and a pinch of salt inside a medium bowl. Whisk smoothly.
