1For the bread: Mix water, yeast, flour, salt, and a splash of oil. Knead until elastic and let it rest covered for an hour until doubled in size.

2Transfer the dough to an oiled tray, stretch it out, and let it rest for another 30 minutes. Then, dimple the dough with your fingers, drizzle with more oil, rosemary, and sea salt.

3Bake the focaccia at 425°F (220°C) for 20-25 minutes until golden brown. Let it cool slightly before slicing.

4While the bread cools, mix the shredded cabbage and carrots with mayo, salt, and pepper to have your fresh coleslaw ready.

5Cut a nice piece of your homemade focaccia in half. Spread a bit more mayo if you like it extra juicy.

6Assemble the sandwich by layering lettuce leaves, tomato slices, and the roasted chicken, then top it with the other half of the bread. Serve with a heap of coleslaw on the side.
