The story behind

There’s a certain magic in seeing flour, water, and salt transform into something so complex. I used to be intimidated by sourdough, but then I realized it's all about listening to the dough. It feels like a shared secret between the baker and time itself. I love slicing into a fresh loaf for a slow Sunday lunch, maybe serving it alongside a hearty vegetable stew or a fresh salad. A crisp white wine or a simple lemon-infused water works beautifully with its natural tang. It’s best enjoyed whenever you need a reminder that the best things in life take a little extra time. Truly a staple for any real bread lover.

Instructions

  1. 1
Mix flour and water and let it sit (autolyse) for about 60 minutes.
  2. 2
Add your active starter followed by the salt, mixing until the dough is cohesive.
  3. 3
Perform sets of stretch and folds every half hour for about 3 hours to build structure.
  4. 4
Shape the dough into a tight round and let it proof in a basket in the fridge overnight.
  5. 5
Preheat a Dutch oven inside the oven at 480°F (250°C).
  6. 6
Score the top with a sharp blade and bake with the lid on for 20 minutes, then uncover for 20-25 more until deeply browned.
