1Mix flour and water and let it sit (autolyse) for about 60 minutes.

2Add your active starter followed by the salt, mixing until the dough is cohesive.

3Perform sets of stretch and folds every half hour for about 3 hours to build structure.

4Shape the dough into a tight round and let it proof in a basket in the fridge overnight.

5Preheat a Dutch oven inside the oven at 480°F (250°C).

6Score the top with a sharp blade and bake with the lid on for 20 minutes, then uncover for 20-25 more until deeply browned.
