The story behind
Bird's nest soup is made from the solidified saliva nests of swiftlets. As seen in the file 'Sopa de nido de golondrina.png', the nest dissolves into a clear, translucent broth, taking on a texture similar to fine jelly noodles. In this sweet version, it is accompanied by slices of jujubes (red dates) that provide color contrast and subtle sweetness, served with a traditional porcelain spoon in a white bowl.
Instructions
-
1Soak the bird's nest in purified water for several hours until it softens and expands.
-
2Carefully clean any impurities or small feathers using tweezers.
-
3Place the cleaned nest in a ceramic double boiler with water and red date slices.
-
4Steam over low heat for 30-45 minutes until the texture is soft and gelatinous, as shown in the image.
-
5Add rock sugar at the end, stirring until completely dissolved.
-
6Serve warm to appreciate its delicate flavor.
