The story behind
This recipe instantly takes me back to a chilly night in Naples. Wandering through the narrow alleys, I found this tiny pizzeria where locals lined up just to grab these hot calzones wrapped in brown paper, eating them right there on the sidewalk. The sheer amount of melted cheese inside blew my mind. At home, I love whipping this up for a cozy weekend dinner while watching a movie. It goes amazingly well with some extra warm marinara sauce on the side for dipping, and to drink, a cold craft beer balances the richness perfectly.

1Preheat your oven to its highest setting (around 220°C or more) and lightly dust a baking sheet with flour so nothing sticks.

2Roll or stretch out the pizza dough with your hands on a floured surface until you have a large, even circle.

3Spread the tomato sauce over only one half of the dough circle, leaving the edges completely clear. Layer the mozzarella, dollops of ricotta, parmesan, and basil leaves on top.

4Fold the empty half of the dough right over the filling to create a giant half-moon shape. Pinch and pleat the edges tightly with your fingers to seal it completely so no cheese escapes.

5Cut two small slits on top with a knife to let the steam escape, brush the surface lightly with olive oil, and bake for about 15 minutes until beautifully golden and crisp.
