1Bring a pot of water to a rolling boil. Gently lower the 4 medium eggs inside and boil over medium heat for exactly 5 minutes and 30 seconds to guarantee the yolk locks into a fluid state.

2Apply the thermal shock rule: immediately lift the eggs out using a slotted spoon and submerge them inside an ice-water bath for 10 full minutes. Peel them with absolute gentleness (they will feel quite delicate) and set aside.

3In a large bowl, mix the raw pork sausage meat thoroughly with the minced salvia, thyme, half a teaspoon of fine salt, and plenty of cracked black pepper until a uniform paste matrix forms.

4Divide the meat into 4 equal portions. Lay down a sheet of plastic wrap (cling film) across your work surface, place a meat portion in the center, and flatten it with damp fingers into a thin, even disk large enough to fully encase an egg.

5Dust a peeled egg lightly through a shallow plate of flour (this serves as a glue to bind the meat). Place the egg at the heart of the meat disk and, drawing the plastic wrap upward to assist you, fully coat the egg in the sausage wrap, sealing all seams smoothly with damp fingers into a perfect sphere.

6Build your breading channel using three shallow bowls: one with the remaining flour, the second with the beaten egg wash, and the third holding the coarse panko crumbs.

7Roll the meat sphere gently through the flour first, submerge it completely inside the egg wash fluid, and finally coat it aggressively across the panko, pressing sutilmente so the rugged crust locks in flawlessly.

8Warm the vegetable oil inside a small deep pot over medium heat until it registers roughly 170°C. Fry the Scotch eggs in small batches for 5 to 6 minutes, rotating them smoothly with a spoon, until the panko jacket develops a completely uniform deep golden-brown browning and the sausage is fully cooked through. Drain over paper towels.
