1Thoroughly pat the chicken pieces completely dry with paper towels and season them aggressively on all sides with coarse sea salt and cracked black pepper.

2In a large, heavy-bottomed skillet, melt one tablespoon of butter over medium-high heat. Lay the chicken skin-side down and sear for 5 minutes until deeply golden-brown and crisp; flip and sear for an additional 3 minutes. Remove the chicken and set aside on a plate.

3In the same skillet with the rendered chicken fats, drop in the minced shallot and celery pieces. Sauté over medium heat for 3 minutes until the shallot turns translucent and fragrant.

4Pour the dry apple cider into the skillet to deglaze the pan floor, using a wooden spoon to scrape up the caramelized bits. Return the chicken to the pan, lower the heat, pop a lid on, and simmer gently for 15 to 20 minutes until the chicken is tender and cooked through.

5While the chicken simmers, melt the remaining butter in a separate small pan and sauté the thick apple wedges over medium heat for about 5 minutes, turning them carefully until golden-brown and caramelized yet firm. Set aside.

6Blanch your dark greens (cabbage or kale) in a small pot of boiling salted water for 2 minutes. Drain thoroughly and set aside.

7Lift the chicken and celery out of the main skillet. Turn the stove heat up to reduce the cider by half, then stream in the heavy cream and simmer on low for 3 minutes until it gathers into a sleek, velvety glaze. Adjust final seasonings with salt and pepper.
