1To construct the filling, combine the hand-chopped pork shoulder cubes, minced pork belly fat, white pepper, ground nutmeg, dried sage, and a teaspoon of fine salt inside a large cold bowl. Blend thoroughly using your hands, then cover and chill inside the refrigerator.

2To build the hot water crust pastry, mix the all-purpose flour and a teaspoon of salt inside a large bowl, shaping a well in the center.

3In a small saucepan, bring the water and the pure lard to a rolling boil over medium heat until the fat is fully melted. Immediately pour this boiling liquid straight into the flour well.

4Stir rapidly with a wooden spoon to incorporate the flour, and as soon as it handles comfortably without burning your skin, knead briefly until a smooth, shiny, and highly elastic dough matrix forms. It must be molded while still warm!

5Divide the dough, keeping one third reserved under a cloth for the top lid. Roll out the remaining two thirds smoothly and line the floor and walls of an 18-cm springform cake tin, ensuring no cracks form.

6Pack the seasoned cold pork mixture firmly inside the pastry lining, pressing down aggressively to eliminate any structural air pockets.

7Roll out the reserved dough third to form the pie lid. Dampen the rim borders with a splash of water, place the lid on top, and pinch the edges firmly with your fingers into a neat crimped seal. Cut out a neat 1-cm hole right in the center of the lid to act as a steam chimney.

8Brush the beaten egg wash uniformly all over the pastry lid using a pastry brush. This step is the ultimate key to achieving that rich golden-brown high shine seen in the photo layout. Bake at 180°C for 1 hour and 15 minutes.

9Remove the pie from the oven and let it cool down slightly. While it remains warm, carefully pour the liquid pork bone stock into the central chimney hole using a small kitchen funnel or syringe, filling all internal gaps created by the shrinking meat.

10Let the pie cool down completely at room temperature, then transfer to the refrigerator for at least 6 hours (or overnight) to allow the stock to set into a perfect firm jelly shield.
