The very first time I experienced an authentic cottage pie was at a tiny countryside inn in Scotland. It was fiercely cold outside, and when they brought this steaming casserole to the table with the mashed potato crust beautifully golden and crisp around the edges, I was instantly won over. The host proudly shared with me that the true difference between a 'Cottage Pie' and a 'Shepherd's Pie' is the meat: cottage pie relies strictly on beef (as historically, cottagers who lived in rural cottages raised cattle), whereas shepherd's pie uses lamb.
