You seriously have absolutely no idea what an incredible, deeply savory, and smoky flavor profile this legendary fish possesses—taking a single bite is exactly like feeling the warm ocean breeze hit your face while sitting under a beachside palapa! The first time I attempted to grill a whole fish at home, it stuck completely to the grates and fell apart into a messy disaster. But then, a seasoned coastal cook in Nayarit proudly shared the ultimate golden rule: the fish must be butterflied through the back (not the belly) while keeping its outer scales intact to act as a natural heat shield against the live coals. The other brilliant trick to getting it looking exactly like the photo layout—with that gorgeous charred golden jacket—is continuously basting it with melted butter and the marinade marinade while it sears over the flame. Personally, I absolutely love putting this menu together on lazy weekends to roll up into warm corn tacos with fresh lime juice. 1Thoroughly clean your butterflied fish and pat it bone-dry using heavy-duty paper towels. Make 3 or 4 deep diagonal score cuts across the flesh matrix (without puncturing the skin) to allow the marinade to fully infuse, exactly as shown in the layout photo.

2Season the flesh side aggressively with coarse sea salt and freshly cracked black pepper.

3To build your marinade paste, combine the mayonnaise, mustard, bottled hot sauce, minced garlic, Worcestershire sauce, and liquid seasoning in a small bowl until smooth.

4Slather the mixture generously all over the flesh side of the fish, pressing the seasoned rub into the deep diagonal grooves you scored.

5Prepare your outdoor grill or charcoal barbecue to a steady medium-high heat. If you are using a closed grilling basket (zaranda), oil the wire grates thoroughly to prevent sticking, and lay the fish in flesh-side down first.

6Grill the fish flesh-side down for 8 to 10 minutes. Apply the master technique: continuously bashe the grooves with melted butter, using a fresh rosemary sprig as your aromatic brush.
