1Rinse your white fish strips and pat them thoroughly bone-dry using heavy-duty paper towels. Season them on a tray with fine sea salt, cracked black pepper, and garlic powder to preference; chill in the refrigerator to keep cold.

2To construct your master batter mix, sift the all-purpose flour, baking powder, and a teaspoon of fine salt together inside a large mixing bowl.

3Slowly stream the ice-cold beer into the bowl while continually whisking with a balloon whisk. You want to achieve a smooth, lump-free texture similar to pancake batter. Chill the batter in the refrigerator for 10 minutes to lock in the cold temperature.

4Prepare your fresh taco components: toss the finely shredded cabbage and carrots together for the slaw, and blend your mayonnaise, sour cream, and chipotle in adobo until a smooth, uniform pink cream builds.

5Pour a generous amount of vegetable oil into a deep skillet or heavy pot and heat over medium-high heat until it hits roughly 180°C. Test by dropping a tiny speck of batter; it should instantly flash-bubble and rise to the top surface.

6Extract the seasoned fish and chilled batter from the refrigerator. Dust each fish strip lightly in dry flour (this allows the wet batter to adhere flawlessly), submerge fully into the cold batter, and slide smoothly into the roaring hot oil pot.

7Deep-fry the fish in small batches for 3 to 4 minutes, turning halfway through, until the shell inflates into that gorgeous, crispy golden jacket visible in the photo. Drain over a wire rack or fresh paper towels.

8Warm your corn tortillas over a hot dry griddle until soft and completely flexible.
