The story behind

The culinary secret to achieving this high-end plating structure lies in a controlled double-blanching technique; this process tempers the vegetable's sharp natural bitterness while locking in the brilliant emerald chlorophyll matrix prior to twisting the nest shape.

1Wash the chicory or dandelion leaves meticulously in cold water baths to remove all traces of field soil.

2Bring a large pot of heavily salted water to a rolling boil. Submerge the greens and blanch for 3-4 minutes to soften the rugged fibers and leach out the aggressive edge of bitterness. Drain and shock.

3Plunge the leaves immediately into a bowl filled with ice water to arrest cooking and set the brilliant emerald green color highlighted in the image.

4Drain the greens with extreme care and squeeze them gently using your hands or a clean kitchen towel to expel all residual moisture. Chop into clean 5-8 cm ribbons.
