The story behind
Last year, I challenged myself to get more greens into my daily routine without getting bored. That is exactly how this bowl came to life. On a random Tuesday after getting back from the gym around lunchtime, I raided my fridge and decided to throw together whatever caught my eye. It turns out that broccoli, Brussels sprouts, and these frozen plant-based meatballs make an incredible team. It is the perfect midday meal because it fills you up without giving you that heavy food coma feeling. I love drizzling it with a quick honey-mustard dressing. Pair it with a chilled cucumber-mint infused water, and you are good to go.

1Heat a teaspoon of olive oil in a skillet and cook the soy meatballs until they are beautifully browned and crispy on all sides.

2In the meantime, steam the broccoli florets and Brussels sprouts for about 5 to 7 minutes so they soften up but keep their vibrant green color.

3Assemble the base of your bowl by arranging the fresh mixed salad greens on one side and the diced cucumber on the other.

4Add the cooked peas, steamed broccoli, and Brussels sprouts into their own little sections around the edge.

5Place the hot soy meatballs right in the center, season the whole bowl with a pinch of salt and pepper, and add your favorite dressing if you like.
