The trick, believe me, is to keep stirring while it cooks; that bit of patience is what gives it that silky texture that practically melts in your mouth. I love serving it with a little pat of butter on top that slowly melts away, creating an irresistible golden pool. 1In a small pot, heat the milk over medium heat until it starts to steam, but don't let it come to a rolling boil.

2Slowly pour in the farina while whisking constantly to prevent any lumps from forming.

3Turn the heat down to low and continue cooking for about 5 to 7 minutes, stirring often until it thickens and becomes creamy.

4Remove from heat, pour into a deep bowl, and place the pat of butter right in the center.
