The story behind
This recipe was born over a weekend movie night marathon when I wanted to build the absolute ultimate chicken sandwich at home. After experimenting with various coatings, I realized that using panko or seasoned breadcrumbs delivered that shattering, golden crunch that plays so beautifully against the fresh, cool layers of tomato and lettuce. Serve it piping hot right off the skillet alongside a mountain of salted french fries, a side of rich tomato ketchup, and a cold milkshake or iced soda to make the night complete.

1Season your chicken breasts evenly on both sides with salt, black pepper, and garlic powder.

2Set up your dredging station: coat each chicken piece lightly in flour, dip completely into the beaten egg, and finish by pressing firmly into the breadcrumbs or panko until fully coated.

3Heat the vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken for about 4-5 minutes per side until the crust turns an absolute gorgeous golden brown and the chicken stays completely juicy inside. Drain on paper towels.
