1Toast the dried guajillo and de árbol chilies in a dry skillet over medium heat for just a few seconds per side, watching like a hawk so they don't scorch, which would render the entire sauce bitter. Submerge them in boiling water for 10 minutes to hydrate.

2To construct your fiery 'diabla' sauce, blend the hydrated guajillo and de árbol chilies along with the boiled tomatoes, chipotles in adobo, and a small splash of the soaking liquid until perfectly uniform.

3Pass the red liquid through a fine-mesh strainer or a chinois, pressing firmly with a ladle to separate and discard any tough skin fragments to achieve that smooth restaurant finish seen in the photo.

4Melt the 3 tablespoons of unsalted butter in a large deep skillet over medium heat. Drop in the minced garlic and sauté for 1 minute until fragrant without letting it catch color.

5Crank the heat to medium-high, add your well-dried large shrimp all at once, and season with sea salt and cracked black pepper to taste. Sauté for only 2 full minutes until they begin curving and blushing into a firm pink shape.

6Pour the strained red sauce directly over the seared shrimp in the pan. Toss smoothly, lower the heat to medium, and let it simmer for 3 to 4 minutes until the sauce reduces, thickens, and turns glossy as it binds with the melted butter fats.

7Meanwhile, flash-fry your thin sweet potato matchsticks in hot oil until deeply golden and intensely crispy. Drain over paper towels.
