1Mix the dry ingredients in a large bowl.

2Add the liquid (and butter if using) and mix until a soft dough forms; do not over-knead.

4Cook in a skillet over medium-low heat for about 8-10 minutes per side, until golden brown and it sounds hollow when tapped lightly.

5Serve warm, split in half, with plenty of butter and your favorite jam.
