The story behind
Instructions
-
1Thoroughly wash the fresh ripe tomatoes and green bell pepper. Peel the cucumber and remove the skin from the garlic clove, slicing it open crosswise to pull out the inner green core.
-
2Roughly chop all the vegetables into chunks and tumble them directly into the jar of a high-powered blender alongside the stale bread pieces and garlic.
-
3Blend on maximum speed for 3 to 4 full minutes until the contents transform into a completely uniform, fluid, seedless liquid liquid matrix.
-
4While the blender is running on medium speed, stream the extra virgin olive oil into the vortex in a slow, steady thread alongside the Sherry vinegar and a teaspoon of fine salt. You will see the red color transform into that stunning, creamy bright orange hue visible in the photo as the oil completely emulsifies.
-
5To secure that flawless restaurant texture, pour the gazpacho through a fine mesh strainer or a chinois, pressing down firmly with a ladle to separate and discard any leftover skin fragments.
-
6Taste the smooth soup and adjust the layers with an extra pinch of sea salt or a dash of vinegar to preference. If you find the structure too heavy, stir in a tiny splash of ice-cold water.
-
7Transfer the gazpacho into a glass pitcher and chill in the refrigerator for at least 2 hours. Andalusian gazpacho must be experienced thoroughly chilled.
-
8While it chills, finely dice your reserved cucumber and tomato pieces into tiny uniform cubes to construct the traditional 'tropezón' garnish layout.
-
9To flawlessly mirror the plating structure of Gazpacho.jpg, ladle the icy cold soup into a deep brown earthenware bowl, crown the center with a tidy spoonful of your diced vegetable garnish, and gracefully drop raw extra virgin olive oil across the surface to form beautiful shimmering droplets.
