Instead of a raw preparation, the caps are lightly grilled to deepen their rich umami base, then packed with a vibrant, tangy salsa—perfectly replicating the beautiful freshness and color seen in the original photo.     Wipe the mushrooms clean with a damp cloth and carefully pop out the stems to create a hollow cavity in each cap. Sauté any extra chopped stems on the side if desired.

    Heat a skillet or grill pan over medium-high heat. Sear the mushroom caps for about 3-4 minutes per side until tender but still holding their firm cup shape. Remove and set aside.
