The story behind
Aguachile is traditionally celebrated for its intensely citrusy, clean, and fiery profile. Bringing this concept to mushrooms utilizes their naturally meaty texture and incredible ability to soak up juices. Instead of a raw preparation, the caps are lightly grilled to deepen their rich umami base, then packed with a vibrant, tangy salsa—perfectly replicating the beautiful freshness and color seen in the original photo. 1Wipe the mushrooms clean with a damp cloth and carefully pop out the stems to create a hollow cavity in each cap. Sauté any extra chopped stems on the side if desired.

2Lightly brush the outsides of the mushroom caps with a touch of olive oil, salt, and pepper.

3Heat a skillet or grill pan over medium-high heat. Sear the mushroom caps for about 3-4 minutes per side until tender but still holding their firm cup shape. Remove and set aside.

4To make the aguachile marinade, toss the fresh lime juice, finely diced onion, tomato, and minced red chili together in a small bowl. Season generously with sea salt.

5Let the vegetable mixture sit in the lime juice for about 5 minutes to macerate and develop flavor.

6Arrange the grilled mushroom caps open-side up on a round rustic wooden board or platter.

7Generously spoon the marinated filling into the cavity of each mushroom, ensuring some of the zesty lime juice pools inside.

8Garnish the center of each stuffed mushroom with a single beautiful leaf or sprig of fresh flat-leaf parsley.
