The story behind
Making gnocchi from scratch has something magical to it. It's a ritual I love when I'm looking for something special for the weekend. By making them vegan, I focus on achieving the perfect texture in the dough using high-quality potatoes, which makes them incredibly light and tender. The tomato sauce, simmered slowly with plenty of patience, captures all the sweetness of ripe tomatoes. Finishing the plate with fresh basil and a touch of vegan parmesan is the final detail that transports anyone directly to a table in Italy. It is, without a doubt, one of my favorite dishes to enjoy in good company.

1Mix the mashed potatoes with the flour until a smooth dough forms; shape into cylinders and cut into small pieces to create the gnocchi.

2Cook the gnocchi in boiling salted water until they float to the surface; remove them immediately.

3Meanwhile, sauté the tomato sauce in a pan over low heat until it thickens and becomes flavorful.

4Add the cooked gnocchi to the pan with the tomato sauce and stir gently to coat them well.
