You seriously have absolutely no idea what an incredible, deeply comforting and crunch-shattering flavor experience these croquettes deliver—it is pure culinary happiness in a single bite! The first time I attempted to make traditional croquetas de jamón at home, they turned out completely dry and dense, like heavy golf balls. It was so disappointing. But then, an experienced tavern cook in Madrid proudly shared the ultimate golden rule with me: the key to failure-proofing the interior fluid texture is cooking the béchamel base for at least 20 minutes to eliminate any raw flour taste, using high-fat whole milk, and letting the dough rest in the fridge overnight so it solidifies enough to roll easily. The other brilliant trick to getting them looking exactly like the photo layout is the neat coating process—rolling them in fine breadcrumbs, dipping in egg, and back into breadcrumbs—which constructs a tight outer shell preventing them from exploding in the hot oil. Personally, I absolutely love putting this menu together for gatherings because they vanish from the table in under three minutes flat. It looks completely identical to the photo composition when you pile the blazing hot rolls into a small metal wire frying basket and balance a fresh sprig of curly parsley right over the center, exactly like the presentation in Croquetas de jamón.jpg.     In a saucepan, heat the whole milk until warm but not boiling, and set aside (you can drop a few ham trimmings inside to infuse a deeper savory layer into the liquid).

    Melt the 90 grams of unsalted butter in a deep heavy-bottomed pot over medium heat. Drop in the tiny diced ibérico ham cubes and sauté for 1 minute so they release their rich, aromatic rendered fat.

    Add the flour all at once and stir continuously with a wooden spoon for 2 to 3 minutes to toast the roux matrix, turning it a faint golden color to cook out the raw flour profile.

    Gradually stream the warm milk into the pot in a slow thread, whisking dynamically with a balloon whisk to guarantee a completely smooth, lump-free integration.

    Once all the milk is incorporated, lower the heat to minimum and cook the thick béchamel for 20 minutes, switching back to a wooden spoon to stir constantly.
