1In a small heavy saucepan, dissolve the cornstarch and white sugar completely inside the cold whole milk. Set over low heat, whisking continuously with a balloon whisk.

2Cook the mixture for 5 to 7 minutes until it concentrates and thickens into a light custard consistency. Remove from the burner flame and immediately stir in the bloomed, squeezed gelatin sheets until completely melted.

3Stream the orange blossom water into the warm custard matrix, stir thoroughly, and pass the entire base through a fine-mesh sieve into a clean bowl to trap any micro-lumps. Let cool to roughly 25°C.

4Gently fold the semi-whipped heavy cream into the cooled milk custard using a silicone spatula, working in slow circular motions to preserve the airy mousse matrix.

5Pour the smooth mixture straight into an 18-cm round silicone entremet mold. Tap lightly against the counter to settle any air pockets and transfer to the freezer for a minimum of 6 full hours until rock-hard.
