The story behind
I love making this dessert because it has such a beautiful history: it's traditionally served in the Middle East to celebrate the birth of a new baby. But, honestly, you don’t need a newborn in the house to enjoy it. I usually whip this up when I’m looking for a quiet moment on a chilly afternoon; the scent of cinnamon and caraway lingering in the kitchen feels like a warm hug. It’s a dense, sweet dessert with that essential nutty crunch that makes it unforgettable. I love having it as a treat after a nice meal, or even as a special weekend breakfast. It’s one of those dishes that connects you to the simple and happy things in life, perfect for sharing with someone you truly care about.
Instructions
-
1In a pot, whisk together the water, rice flour, sugar, cinnamon, and caraway until there are no lumps.
-
2Cook over medium heat, stirring constantly so it doesn't stick to the bottom, until the mixture thickens into a smooth pudding texture.
-
3Once it has the desired consistency, remove from heat and pour into individual bowls.
-
4Let it cool down; you can serve it warm or pop it in the fridge to enjoy it cold.
-
5Just before serving, garnish generously with the mixed nuts and shredded coconut to give it that satisfying crunch we all love.
