The story behind
Jianbing is, without a doubt, one of those street foods that makes your day. I remember the first time I saw one being made: with incredible skill, they spread the batter over a hot griddle, cracked an egg on top, and layered on flavors that, in the end, become a totally addictive bite. I love making this when I want a breakfast or lunch that feels a little adventurous yet incredibly comforting. It’s perfect for sharing, though to be honest, once you have it in your hands, it’s hard to let go. The combination of the soft crepe with the crunchiness inside, along with the fresh touch of vegetables and protein, makes it such a satisfying meal. It’s like a little crispy gift you can eat on the go!

1Mix the flour with water until you get a light, runny batter.

2Spread a thin layer of the batter over a hot skillet, crack an egg on top, and spread it across the surface.

3Once the egg has set, carefully flip the crepe.

4Spread your chosen sauce, add the vegetables, protein, and finish with the crispy crackers (baocui) for that special crunch.

5Roll the Jianbing carefully and serve immediately, preferably wrapped in paper to keep it warm and easy to eat.
