Served with hot tea and fresh tomatoes, just like in the picture, it’s the perfect lunch for a relaxing day. It is, without a doubt, one of those recipes that makes you feel like you’ve brought a little piece of the world into your own kitchen.

    Mix the flour with water and salt until you get a smooth dough; let it rest covered for 20 minutes.

    While it rests, prepare the filling by mixing the spinach with the crumbled feta cheese.

    Divide the dough into small balls and roll each one out until it forms a very, very thin circle.

    Place a portion of the filling in the center, fold the edges towards the center to seal the Gözleme into a square or rectangle.

    Cook on a hot griddle or skillet, brushing with olive oil, until golden and crispy on both sides.

    Serve piping hot, ideally with a cup of tea and some fresh vegetables.
