The story behind
Frico Friulano is the soul of the mountains in the Friuli region. It’s a humble recipe, born from the need to use up leftover cheese at home, but it becomes an absolute delicacy when cooked with patience. What I love most is the contrast of textures: a deeply golden and crispy outer layer that, when broken, reveals a tender, melted heart. Preparing it is a little ritual that fills the kitchen with an intense and delicious aroma. It’s the perfect comfort food for a cold day, served on its own or with a fresh side salad.
Instructions
-
1Grate the cheese and the potatoes using a coarse grater.
-
2In a non-stick pan, sauté the onion in the oil until translucent.
-
3Add the grated potatoes and cook over medium heat for about 10 minutes until tender.
-
4Incorporate the grated cheese over the potatoes, distributing it evenly.
-
5Cook without stirring until a golden crust forms on the bottom, carefully flip, and brown the other side before serving.
