1The night before cooking (at least 12 hours prior), submerge your dried chickpeas in a deep bowl of lukewarm water with a tablespoon of coarse salt to hydrate properly.

2In a large, heavy-duty stockpot, arrange all your cleaned meats: beef shank, hen quarter, pork belly, ham bone, and marrow bone. Pour in plenty of cold water (about 4 liters) to submerge completely and set over high heat.

3Right before the water hits a roaring boil, a thick grey foam layer will blanket the surface. Using a slotted spoon, meticulously skim away every trace of this foam. This step is completely critical to achieving that clear golden broth shown in the photo.

4Once the water is boiling cleanly, drain the soaked chickpeas and drop them into the pot (ideally nestled inside a mesh cooking net so they can be extracted together easily later). Wait for the boil to return, then immediately drop the stove flame to its lowest simmer setting.

5Cover the stockpot partially and let it simmer very slowly for 2 hours, checking occasionally to ensure the water maintains a gentle, lazy bubble matrix.

6After the first 2 hours of braising, drop your peeled carrot chunks and whole potatoes into the pot along with the chorizos (it is highly recommended to simmer the delicate morcilla blood sausage in a separate small pan with water for 15 minutes so it doesn't break open or muddy your main soup). Season the broth with a healthy pinch of coarse salt.

7Simmer everything together on low for an additional 30 to 40 minutes until the potatoes are tender and the chickpeas gather an incredibly buttery, melt-in-your-mouth texture.

8Turn off the heat. Carefully siphon off all the cooking liquid, straining it through a fine-mesh sieve or cheesecloth into a clean pot to secure that flawless, translucent golden broth.

9To capture the beautiful presentation structure of Cocido madrileño.jpg, ladle the hot clear soup into a rustic stoneware bowl set over a wooden board. On its left, plate a generous mound of the drained chickpeas and neatly assemble the whole chorizos, sliced morcilla, pork belly, beef shank, and chicken around the borders before serving hot.
