The name itself is quite historical, as 'cappon' refers to a capon (poultry), but it is called 'magro' (lean) because it is a fast-day dish completely free of meat, originally conceptualized for Lenten abstinence. What completely blows my mind about this recipe is the incredible culinary precision required: every single vegetable and protein is cooked in separate batches to perfect its unique texture profile, and then layered upwards using a traditional Ligurian green herb sauce (loaded with flat-leaf parsley, pine nuts, capers, and anchovies) as the culinary mortar that fuses each floor of flavor. Personally, I absolutely love prepping this for high-end celebrations because watching your guests' faces light up when you carry this spectacular pyramid to the table is purely magical.
